What comes through in flavor is a rich, buttery sweetness with a dark, smoky character and a hint of molasses. It tastes nothing like avocado, and it is one of the most unexpectedly complex honeys you will find.
My honey has crystallized. Is it still good?
Absolutely. Crystallization is a natural process and a sign of purity, not spoilage. Raw honey crystallizes more readily than processed honey because it retains its natural glucose content.
