I think, as Americans were so used to crappy olive oil, that we’re shocked when we experience quality olive oil. Years ago I heard some of the best olive oil in the world is from Palestine and the Island of Crete. That was before the Internet, so it was almost impossible to be able to purchase extra-virgin olive oil from these locations. Well, here’s my experience, I open the bottle I decide to take a teaspoon full Just to get a taste. It was so strong and bitter and burnt my throat made me cough twice. Lol didn’t taste like any olive oil I’ve ever tasted that I bought at a grocery store. So I googled should olive oil, make your throat, burn, taste, bitter and peppery, and even make you cough. And basically, I got a science lesson, the more burn, the more bitter, the more peppery, the more cough, the higher the polyphenols. It mentioned with regular use it’s right in line with the effects of ibuprofen on pain. I plan on purchasing again, and I would encourage everyone else to do the same. Sidenote: I even took a glass bottle, poured a generous amount of the oil in it, added several tablespoons of zaatar, garlic powder and sea salt and roasted carrots and potatoes in the oven with this infused oil to say it was delicious is an understatement it was absolutely delicious! And free Palestine!!!❤️

I love the oil--it is light and deep at the same time. And I love that it is Palestinian given the erasure of so much that is theirs. I first received the oil as a gift and then sent it as a gift to others this holiday. Ordering was easy and prompt.
