High-Polyphenol Olive Oil: What the Number Actually Means

Polyphenol counts on olive oil range from near zero to over 1,000 mg/kg — a twenty-fold spread between bottles that look identical on the shelf. Here is how to read the number, which threshold actually means something, and why the same oil tests differently every year.
A polyphenol count is a measurement, not a marketing word. It tells you how much of a specific family of naturally occurring compounds survived from the olive tree into your bottle.
Most olive oil sold in the United States never publishes this number, which is usually the answer in itself — oils that test well tend to say so. The difficulty for anyone shopping is that "extra virgin" is a grade based on chemistry and taste defects, and it says almost nothing about polyphenol content. An oil can be legitimately extra virgin and still carry very few polyphenols.
What is a good polyphenol count?
250 mg/kg is the only threshold with a regulatory definition behind it. Everything else is convention. Here is where real oils actually fall.
The one number with a legal definition. In the European Union, Commission Regulation (EU) No 432/2012 authorises the claim that "olive oil polyphenols contribute to the protection of blood lipids from oxidative stress." It may be used only for olive oil containing at least 5 mg of hydroxytyrosol and its derivatives per 20 g of oil — roughly 250 mg/kg — and the consumer must be told the effect is obtained with a daily intake of 20 g of olive oil.
This is an EU regulatory standard. We reference it because it is the only widely recognised, independently defined polyphenol threshold in the industry — not as a health claim about any specific product.
Why the same oil tests differently every year
Polyphenol content is agricultural, not manufactured. The same grove, the same producer, and the same variety will produce a different number each season. Four things drive it.
Olive variety
Coratina, Picual, Koroneiki and Moraiolo are naturally high in polyphenols. Arbequina and Taggiasca are naturally milder. Variety sets the ceiling before anything else happens.
Harvest timing
Green, unripe olives carry far more polyphenols than ripe black ones. Early harvest means less oil per olive and a higher count — which is why high-polyphenol oil costs more to produce.
Milling and processing
Time between picking and crushing, malaxation temperature, and oxygen exposure all reduce polyphenols. Hours matter.
Age and storage
Polyphenols degrade from the day of milling. Heat, light and oxygen accelerate it — a high number at harvest is not a permanent number. (We covered this in detail in how to store olive oil so it doesn't go rancid.)
This is why we publish a harvest date and a current lab figure on individual bottles rather than a fixed claim for a variety. A number without a harvest year attached to it is not telling you very much.
How to read a polyphenol figure before you buy
Four questions separate a meaningful number from a decorative one.

You can also taste it. Polyphenols are what make good olive oil taste bitter and produce that peppery catch at the back of the throat — a sensation caused largely by oleocanthal. Storage protects the number — it can't raise it
Perfect storage only preserves what was there to begin with. An oil that was already low in polyphenols when you bought it — late harvest, blended, refined, or bottled two years ago — will not improve in your pantry. The buying decision matters more than the storage decision.

Frequently asked questions
Is a higher polyphenol count always better?
Not for every purpose. High-polyphenol oils are assertive — bitter, pungent, and peppery — which suits raw applications like finishing, salads, bread and vegetables. For a delicate mayonnaise or a light cake, a milder Arbequina may simply taste better. The highest number is not automatically the right bottle for what you are cooking.
Does cooking destroy polyphenols?
Heat reduces them, and the longer and hotter the cooking, the greater the loss. Polyphenols also make olive oil more stable at heat than most oils, so it remains a reasonable cooking fat. But if the polyphenol content is the reason you bought the bottle, use it raw or add it at the end.
Why does high-polyphenol olive oil cost more?
Because it is picked early. Green, unripe olives yield substantially less oil per kilo than ripe ones, so the same grove produces fewer bottles. Add rapid milling, temperature control, and laboratory testing, and the cost per bottle rises before anything reaches a shelf.
How long do polyphenols last after opening?
Decline begins at milling and accelerates once the bottle is opened and exposed to oxygen, light and warmth. Store the bottle sealed, away from the stove and out of sunlight, and use it within a few months of opening. Buying a smaller bottle you finish is better than a large one that sits.
Does "extra virgin" mean high in polyphenols?
No. Extra virgin is a grade defined by free acidity, peroxide value and the absence of sensory defects. It sets a floor for quality but says nothing about polyphenol content. Plenty of genuine extra virgin olive oil is low in polyphenols.
