Three honeys. One mountain. All three come from the same place: the protected natural reserves of O Courel and Ancares in Galicia, northwestern Spain, where Toca's apiaries sit above 600 meters altitude in uninhabited terrain shared with brown bears, amid forests of oak, chestnut, heather, and bramble. The bees here are fed only their own honey. The hives receive no chemical treatments. Every batch is extracted cold and bottled raw — never heated, never filtered — so the pollen particles, enzymes, and full biological complexity of each honey reach you exactly as the bees made it.

Toca is the premium line of Mieles Anta, a family beekeeping operation founded by David Corral over 30 years ago. His work was recognized with the OSYXENE 2006 award by Galicia's ecological defense association. Since then, the accolades have continued: Best Honey in Spain (OCU, 2015), Two Stars at the Great Taste Golden Forks (2021), London Honey Award (2021), BIOL International Organic Honey Prize (2020), and American Food Awards (2021). These are not the same honey in three jars — they are three genuinely distinct products from the same extraordinary beekeeper, each shaped by a different blossom source and, in one case, enriched with a second hive product. Select your variant above. All three are 9.5 oz (270g), USDA Certified Organic, Non-GMO, raw, and allergen-free.

Eucalyptus Honey

Eucalyptus trees arrived on the coastlines of Galicia from Australasia in the late 1800s and have become deeply woven into the region's Atlantic landscape. Toca's coastal apiaries — where bees also collect from chestnut and heather — produce this eucalyptus honey from those Galician coastal blooms exclusively, a variety found nowhere else. It is the mildest and most approachable of the three: a soft, gentle honey with a distinctly intense aromatic presence that contrasts with its delicate flavor. Amber in color and crystallizing to warm golden tones, it carries a floral aroma with a characteristic waxy note — the signature quality of eucalyptus blossom honey — and a taste that is sweet and lightly acidic without heaviness.

Eucalyptus honey has long been associated with balsamic properties traditionally used to support respiratory health. It is the most versatile of the three for daily kitchen use — gentle enough for anything.

Flavor: Sweet, mildly acidic, floral with a distinctive waxy balsamic note. Medium intensity, clean finish.
Color: Amber, crystallizes to golden tones
Pairs with: Aged cheeses, ricotta pancakes, pears, port wine, chamomile or herbal tea, mild yogurt
Ingredients: 100% organic Spanish eucalyptus honey

Honey + Propolis

Propolis is one of the most remarkable substances a beehive produces. Bees collect resins from the buds of conifer trees — here, from the eastern Galician mountains that shelter the Ancares and Courel reserves — mix them with pollen and their own active enzymes, and use the resulting compound to seal and sterilize every surface of the hive against bacteria, fungi, and viruses. It is literally the hive's immune system in material form. Toca blends 2% of this mountain propolis into their organic wildflower mountain honey, creating a dark amber honey with an intense, complex flavor and a characteristic lingering warmth in the throat that propolis alone produces — immediately distinctive from the first spoonful.

The propolis here is sourced from the same mountain environment as the honey, giving the blend a coherent character rather than an additive feel. It is traditionally taken a tablespoon at a time to support immune defenses, particularly during cold and flu season, and pairs especially well with warm drinks and herbal teas.

Flavor: Intense and complex. A warming, lightly resinous sensation lingers in the throat. Noticeably bolder than the other two variants.
Color: Dark amber
Pairs with: Warm herbal teas, honey-lemon drinks, plain yogurt, spread on toast as a daily wellness ritual
Ingredients: Organic Spanish wildflower mountain honey 98%, organic propolis 2%

Wildflower Honey

The most expressive of the three. This is Toca's pure multifloral mountain honey — raw, cold-extracted from bees foraging across the full spectrum of mountain blooms in the Ancares and Courel reserves: chestnut, eucalyptus, heather (Ericaceae), bramble (Rubus), rosaceae, and gorse. Because the bees draw from multiple nectar sources across the mountain landscape, this honey reflects the full botanical richness of Galicia's high-altitude forests rather than a single blossom type. The result is complex, mineral-rich, and powerfully aromatic — amber to dark amber in color, prone to crystallization as raw honey should be, with a flavor that is very pronounced and defined by a slightly acidic brightness with deep floral and vegetal undertones.

This is the honey for someone who wants to understand what exceptional raw mountain honey actually tastes like. It is the most minerally complex and assertive of the three — a daily honey that reveals more the longer you use it.

Flavor: Intense aromatic, slightly acidic, with pronounced floral and vegetal complexity. Mineral-rich.
Color: Amber to dark amber, crystallizes naturally
Pairs with: Toast and biscuits, yogurt and fruit, tea and coffee, dressings, marinades, cheese boards
Ingredients: 100% organic Spanish mountain wildflower honey

About Raw Honey

All three Toca honeys are raw — extracted cold and never subjected to heat treatment or filtration at any point in the process. This preserves naturally occurring pollen, enzymes, and trace compounds that commercial heating destroys. Crystallization is a sign of purity and raw extraction, not spoilage. To reliquefy, place the jar in a bowl of warm (not boiling) water. Properly stored at room temperature away from direct sunlight, honey has an indefinite shelf life.

Frequently Asked Questions

What are the differences between the three variants?

Eucalyptus Honey is a monofloral honey from Galicia's coastal eucalyptus groves — mild, sweet, lightly acidic, with a distinctive floral-waxy aroma and balsamic character. The most approachable and versatile of the three.

Honey + Propolis is a wildflower mountain honey blended with 2% Galician propolis — dark amber, intense, and complex, with a characteristic warming sensation that lingers in the throat. The boldest of the three.

Wildflower Honey is a pure raw multifloral mountain honey drawn from the full botanical spectrum of the Ancares-Courel reserves — chestnut, heather, eucalyptus, bramble, and gorse. Amber to dark amber, mineral-rich, aromatic, and pronounced in flavor.

Why is this honey considered award-winning?

Toca / Mieles Anta has received consistent international recognition: Best Honey in Spain by the Consumer and User Organisation OCU (2015), Two Stars at the Great Taste Golden Forks (2021), London Honey Award (2021), BIOL International Organic Honey Prize (2020), American Food Awards (2021), and the OSYXENE 2006 award from Galicia's ecological defense association. The recognition spans both quality and environmental commitment — the awards reflect both flavor and the extraordinary raw ingredients available from hives in protected, uninhabited mountain reserves.

What is propolis and what does it do?

Propolis is a resinous compound bees produce by collecting resins from the buds of conifer trees and mixing them with pollen and their own active enzymes. They use it to seal and sterilize the hive — it is effectively the colony's immune system, protecting against bacteria, fungi, and viruses. In food use, propolis is associated with anti-inflammatory, antioxidant, and antimicrobial properties, and is traditionally taken to support immune defenses. The 2% propolis in Toca's Honey + Propolis is sourced from Galician mountain conifers in the same reserves as the honey itself.

What does "raw" honey mean, and why does it matter?

Raw honey is extracted cold without heat treatment or mechanical filtration at any stage. Commercial honey is typically heated to improve pourability and extend shelf life — a process that destroys naturally occurring pollen, enzymes, antioxidants, and trace compounds. Toca never heats or filters any of their honeys, which is why they retain their full pollen content, complex flavors, and natural bioactive profile. It is also why you may see natural crystallization in the jar — a sign of purity, not spoilage.

My honey has crystallized. Is it still good?

Yes — crystallization is natural and expected in raw honey. It is a sign that the honey is unprocessed and retains its full sugar and pollen content. To reliquefy, place the sealed jar in a bowl of warm (not boiling) water and allow it to dissolve slowly. Never microwave — high heat degrades the enzymes and flavor compounds that make raw honey worth buying. The Wildflower and Honey + Propolis variants are more prone to crystallization than the Eucalyptus; all three will reliquefy easily with gentle warming.

Which variant should I choose?

Choose Eucalyptus if you want a mild, approachable honey for everyday use — spreading, sweetening drinks, pairing with cheese, or as an introduction to Toca's range.

Choose Honey + Propolis if you are interested in honey as a wellness food and want the immune-supportive properties associated with propolis — or if you prefer a bolder, more intense flavor profile.

Choose Wildflower if you want to experience what exceptional raw mountain honey tastes like at its most complex and full-flavored — the most versatile for cooking and the most minerally interesting to eat straight.

All three together make an excellent gift or personal tasting set.

Where exactly do Toca's bees live?

Toca's apiaries are located in the protected natural reserves of O Courel and Ancares in Galicia, northwestern Spain — above 600 meters altitude, in uninhabited mountain terrain far from conventional agriculture and road traffic. The bees share this landscape with Galician brown bears in forests of chestnut, oak, heather, bramble, and thyme. The remoteness and protected status of the location is a key factor in the honey's quality — there is no pesticide exposure and the botanical diversity is exceptional. David Corral, who founded the operation, was recognized with the OSYXENE 2006 award specifically for his contribution to protecting this environment through sustainable beekeeping.

Are these honeys organic and certified?

Yes. All three variants are USDA Certified Organic and Non-GMO verified. The apiaries are located in protected mountain reserves far from conventional agriculture. Hives receive no chemical treatments. Bees are never fed supplementary sugar — they are sustained only on their own honey. No additives, no preservatives, no added sugars of any kind.

How should I store these honeys?

Store at room temperature in a cool, dark place away from direct sunlight. Refrigeration is not necessary and will accelerate crystallization. Keep lids tightly sealed. Properly stored raw honey has an indefinite shelf life — it does not expire. If crystallization occurs, gently warm the jar in a bowl of warm water to reliquefy without damaging the honey's enzymes or flavor.

Can these be given as gifts?

All three make excellent gourmet gifts individually, and a trio set of all three is particularly striking — three honeys from the same award-winning Galician beekeeper, each with a distinct character and story. Georgetown Olive Oil Co. ships nationwide and offers gift cards and curated collections.
